The name “Gizdodo” comes from combining “gizzard” and “dodo,” the Yoruba word for fried plantain. This dish is very popular at Nigerian parties and homes, often served alongside rice dishes such as jollof rice or plain white rice or enjoyed on its own as a savory snack.
Ingredients and preparations
Chicken gizzards are cleaned, boiled or simmered until tender, then fried until crispy.Ripe plantains that are firm but sweet are sliced and deep-fried until golden.
The peppered sauce is made by cooking down tomatoes, onions, hot and bell peppers, garlic, and spices until flavorful and aromatic.
The fried gizzards and plantains are then sautéed together in the sauce just before serving to allow the flavors to meld without losing the crispiness of the dish.
